Piña Colada Frozen Dessert

Pineapple juice, coconut and rum added to ice cream create a cool tropical dessert.

Ingredients

1 1/4: cups graham cracker crumbs (about 16 squares)

1/4: cup butter (melted), or canola or soybean oil

1: tablespoon sugar

1: quart (4 cups) vanilla no-sugar-added, reduced-fat ice cream, slightly softened

1: can (8 oz) crushed pineapple in juice, undrained

2: teaspoons rum extract or 1/4 cup rum

2: teaspoons coconut extract, if desired

1/4: cup flaked coconut, toasted*

Directions

1 Heat oven to 350°F. In small bowl, mix cracker crumbs, butter and sugar. Press into ungreased 8-inch square (2-quart) glass baking dish. Bake about 10 minutes or until dry. Cool completely, about 1 hour.
2 In large bowl, beat ice cream, pineapple with juice and extracts with electric mixer on low speed just until blended. Spread in baked crust. Freeze about 6 hours or until firm.
3 Remove dessert from freezer about 5 minutes before serving. Sprinkle coconut over top.

I made this yesterday & as I am not a fan of Graham Crackers I used Nilla Wafers I also forgot to add the rum extract. However it turned out great so refreshing to eat. I will make this again with the extracts or try the Pina Colada mix.

I haven't tried it yet but am very soon - think I will add the frozen Pina Colada mix - that sounds like it would make it awesome!

I have not tried this yet, but it looks good! One problem I have had lately with Pillsbury recipes - they no longer seem to give the number of servings. Instead, they state the number of ingredients. I can count, thank you, but it's sometimes hard to guess how much a given recipe makes.

I made this for a July 4th cookout at work. It was a huge hit! I used Malibu Coconut Rum (and put in a little extra)and topped it off with toasted coconut and mandarin oranges. It wasn't bland at all. It was perfect!

i made this exactly what the recipe says. I didn't use any pina colada mix and it turned out perfect. Maybe the mix is what is throwing it off, but make it just like what it says.
