While meatballs are a go-to appetizer, I like to scoop them onto our dinner plates. These cheesy, pizza-flavored bites quickly become a main dish for my family with only the addition of biscuit bowls made from Pillsbury Grands! Jr. refrigerated biscuits Serve alongside some veggies and you’ve got a nice filling meal!
Mix the meatball ingredients in a large bowl: about 2 pounds of ground beef, 1 egg, ¾ cup Progresso Italian style bread crumbs, 1/4 cup Parmesan cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper. Don’t be afraid to get your hands messy!
Shape the meat mixture into individual balls with a ½-inch cube of mozzarella in the center. Shape the meat around the cheese to fully enclose. The meatballs will be about golf ball size.
Place each meatball on a lined baking sheet as you shape them. My suggestion is to prep the meatballs the night before and let them sit in the fridge overnight. Then you can quickly sear them and toss them in the slow cooker in the morning!
Sear the meatballs about eight at a time in a skillet, just for a few minutes.
Move them into the slow cooker and layer with pizza sauce. Cover and cook on low for 6-8 hours.
When the meatballs are done, use the warm setting on the slow cooker while preparing the biscuit bowls. Shape refrigerated biscuit dough around the back side of a cupcake pan.
Bake for 10 minutes. Let cool and remove. Serve with meatballs.
