I love icebox cakes. They are so simple and fun! This particular version layers ready-made, flaky Cinnamon Roll Toaster Strudels and is drizzled with frosting and caramel. Genius, right?
Start by lining the bottom and sides of a 9x5-inch loaf pan with plastic wrap.
Stir the cinnamon into the whipped topping, and then spread a thin layer of the whip on the bottom of the pan. Add a single layer of the Toaster Strudels and top with additional whipped topping.
Continue with this pattern: one layer of pastries, topped with a layer of whipped topping, until all 12 of the Toaster Strudels in the box are used. Spread another layer of whipped topping over the entire cake.
Sprinkle a light dusting of cinnamon over the cake, cover it tightly with plastic wrap and freeze for at least four hours or overnight.
To serve, remove the plastic wrap. Then place a serving platter upside-down over your pan. Turn the platter and pan over, remove the pan and gently peel off the rest of the plastic wrap.
Drizzle pastry icing, caramel and additional cinnamon, if desired, over the cake. Then simply slice and serve!
