Lemon Chicken with Potatoes
This easy dinner trick is my go-to chicken dish for rushed weeknights.

I’m a big fan of the chicken thigh. It’s automatically a smaller portion—perfect for my little one—and it tends to be more moist than a chicken breast. Translation: It’s really hard to overcook. Simply brown your chicken, combine the ingredients in a pan, throw it in the oven and walk away.

Here's how I make it my own:

  • Swap in oranges for the lemons for a tad sweeter taste.
  • Add in veggies to make it even more nutritious. I always have frozen broccoli on hand.
  • Top with a little parm as it comes out of the oven for a salty, cheesy bonus.
