Carrot Cake is a true classic, and it should be treated with the utmost respect. That's why I’ve completely turned it on its head and created these carrot cheesecake bars with a cookie crumble top. Now that's a way to honor tradition! With spring in full swing, carrot cake is one of the first recipes I want to make. Sometimes, however, we need this treat in a quick and easy bar that’s simple to pick up and enjoy on the go or make with the family. This recipe is certainly that. The recipe starts with a simple carrot cake box mix which shortcuts a lot of the steps but doesn't cut down on any of the amazing taste! The bottom layer combines the cake mix with 1 stick of melted butter and an egg. You simply press it down into the bottom of the pan. Next you mix together 2 packages of cream cheese, 3/4 a cup of sugar and 2 more eggs until the mixture smooth and creamy. The cheesecake filling is spread on top of the carrot cake bottom. Lastly, and this is my absolute favorite part, you crumble Pillsbury sugar cookie dough over the top of the cheesecake filling. Now you’re talking! The entire pan gets baked into delicious submission (35 to 45 minutes at 350 ° F). You will seriously want to eat the entire pan. Trust me, you've been warned.
