Zucchini is going crazy right now! My garden is exploding with the hearty veggie and it’s also all over grocery stores and farmers’ markets. My family isn’t a big fan of it by itself, but I personally love it. BUT, these zucchini tots are a twist on the potato tots, which is something that my family definitely enjoys!
These tots come together in just a few minutes, using pre-seasoned bread crumbs and just a couple other ingredients.
Start by shredding 1 medium zucchini, and squeezing out all of the water. Add ¼ cup grated onion, ¼ cup bread crumbs, ¼ cup grated Parmesan cheese and an egg. Stir until well combined.
