During the school year, I sometimes like to surprise my kids with a special after-school snack. One day, I decided to whip up these easy appetizers about 40 minutes before I needed to run to school to get the kids. The puff pastry was already thawed and waiting, so everything was ready to go.
I often worry about the wisdom of making something so soon before I am due to leave because of all the variables. What if the recipe takes longer than I am expecting? What if the recipe fails and I have nothing to surprise the kids with? But not this time. I knew these easy appetizers would be wonderful.
And guess what? I was totally right!
These three-ingredient appetizers are as simple as it comes. But you would never guess it biting into them. The sweet and ever-so-slightly-tart raspberry preserves are a great complement to the creamy brie cheese.
When I make these for the kids or for guests, I like to leave the rind on the cheese because it adds a little texture to the filling. But if you aren't a rind fan, you could remove it.
The key here is to have everything ready beforehand. Defrost the puff pastry. Measure the raspberry preserves. Chop up the brie. Then all you have to do is cut, assemble and bundle.
