How Do You Make Pumpkin Spice-Cranberry Air-Fryer Cookies?

Simply slice off some of the Pillsbury™ sugar cookie dough and stir in pumpkin pie spice, sweetened dried cranberries and pecans to make a batch of cookies ready for the air fryer in just 10 minutes.

Can I Use All of the Cookie Dough At Once?

You can make all 24 cookies in air fryer by mixing up a batch of the cookie dough just once. Use the entire roll of cookie dough, increasing pumpkin pie spice to 2 teaspoons, the cranberries to 1 cup and the chopped pecans to ½ cup as indicated in Step 1. While cooking one batch of cookies in the air fryer, keep the remaining dough covered and refrigerated. Repeat with remaining dough to make 4 batches of cookies; 6 cookies each.

Why Do Air Fryer Cookies Lose Their Shape?

Cookies in the air fryer sometimes lose their shape. It doesn’t happen all of the time, but if it does, after baking, use a metal spatula to gently push in the edges of the cookies to reshape them.

Ingredients

Steps

  • 1
Line inside of air fryer basket as follows: Turn basket of 5.8- or 6-quart air fryer over to shape piece of foil around basket bottom, then remove. Fold edges of foil to make the shape of the basket. Place inside bottom of air fryer basket, shiny side up; flatten evenly.
  • 2
Slice off one-quarter of cookie dough package; tightly rewrap remaining cookie dough in plastic wrap and place in a resealable food-storage plastic bag. Refrigerate or freeze for another use.
  • 3
In medium bowl, break up cookie dough. Stir or knead in pumpkin pie spice, cranberries and pecans, until well mixed. Shape dough into 6 (1 1/4-inch) balls.
  • 4
Place cookie dough balls on foil in air fryer basket, spacing evenly apart. Press down slightly to 1 1/2 inches. Set air fryer to 320°F; cook 13 to 15 minutes or until edges of cookies are set (centers will be soft).
  • 5
Let cookies stand in basket 5 minutes. Using foil, carefully remove cookies from basket. Use spatula to transfer cookies from foil to cooling rack. Cool completely, about 30 minutes.

Tips from the Pillsbury Kitchens

  • tip 1
For the freshest and prettiest homemade cookies, stir up one batch of spiced pumpkin-cranberry cookie dough at a time and bake as directed, each time you want fresh cookies.
  • tip 2
For uniformly-shaped cookies, used a #40 cookie scoop to measure the dough to shape it into balls.
  • tip 3
For cookies with a crisp exterior and chewy interior, cool the cookies as directed. For softer cookies, you can enjoy them after they stand in the basket 5 minutes.

Frequently Asked Questions

Do I need to line the air fryer basket with foil?

Yes, lining the basket with foil allows you to lift the foil with the very tender, just-baked air-fryer cookies out of the appliance, This allows you to move them easily. Do run air fryer with foil only inside.

My air fryer doesn’t have the same temperature control settings, how can I make these cookies?

Air fryer temperature control settings vary according to brand and mode. Consult your appliance’s manual for suggested temperature settings.

My cookies didn’t cook—what happened?

Air fryers with strong fans can cause excess foil to fall, covering cookies in air fryer. If this happens, try using a piece of foil in the basket with less excess foil on the sides.
