I used Muir Glen® Organic Red and Yellow Diced Tomatoes to create a Mexican-inspired pasta with yellow pepper, cilantro and jalapeno. When jalapenos are seeded, they add a little spice but are not too hot. 

This sauce comes together while the pasta is cooking.

Heat the butter and oil over medium heat. Add garlic and jalapeno; cook and stir for 30 seconds. 

Clean the cilantro and then chop finely 1/2 cup.

Add the yellow pepper and the two cans of tomatoes. Cook for 3 minutes.

Drain the pasta and add to the skillet. Stir in salt, pepper and cilantro. Serve with freshly grated Parmesan cheese.
