I don’t like to admit this, but I do have one picky eater amongst my four children.
“Onions!?” she’ll ask. “No, I don’t like this meal.”
“Ham!” she squeals. “Yuck, not for me.”
“Spinach?” she questions, as she turns up her nose. “I’m not hungry.”
It’s pretty much without fail that my 4-year-old daughter will find something she doesn’t like about the meals I serve. I’ve resorted to adding things I know she loves to my dinners, in order to get her on board. One thing she’s crazy for are Grands! Flaky Layers Biscuits. I kid you not; she’ll jump with joy when I tell her we’re having her favorite biscuits with dinner.
Then I got a brilliant idea. Why not combine delicious (kid-approved) flavors into a flaky biscuit-lined cup for a quick weeknight dinner that the whole family will love?
I made these mini beef-and-potato nugget casseroles and my tiny 4-year-old girl gobbled down three of these bad boys! Yes, three!
All you have to do is grab a tube of Grands! Flaky Layers Biscuits and press them into a lightly greased muffin tin.
Brown some ground beef and then mix in a simple combination of barbecue sauce, ketchup and mustard. (Sometimes I’ll add a cup of frozen corn or peas to the sloppy Joe mixture to sneak in some vegetables.) Spoon a little of the beef mixture into each of the biscuit-lined cups.
Bake them until the potato nuggets are hot and golden brown and the biscuits are baked through.
These mini beef cups are fun to make, and even more fun to eat. I’m sure your picky eaters will agree!
