Potatoes: We use about 6 medium potatoes for this recipe—when sliced, this ends up being around 6 cups of potatoes. We suggest thinly slicing them, but you can dice instead if you prefer. No matter the shape or size of potato, you’ll know they’re ready when they’re fork-tender.

Cubed Cooked Ham: You can get pre-cubed ham at many grocery stores, or use leftover ham if you have it. The ham adds saltiness and savory flavor.

Cream of Mushroom Soup: This soup adds creaminess and flavor to the potatoes. You can substitute cream of chicken or cream of broccoli soup if you prefer.

Other Ingredients You’ll Need: A coarsely chopped onion adds flavor and goes fantastically with potatoes. Milk thins out the cream of mushroom soup, which is often condensed in a can. Shredded cheddar cheese adds additional cheesiness and creaminess. Pepper is a finishing spice that helps to heighten the flavors in the dish.

How to Make Slow-Cooker Cheesy Potatoes and Ham

1. Mix Ingredients

In a large bowl, mix the potatoes, onion, and ham. In a separate medium bowl, mix soup, milk, cheese, and pepper.

2. Put Ingredients in the Slow Cooker

Spray a 3- to 4-quart slow cooker with cooking spray. Spoon potato mixture into the sprayed slow cooker. Pour the cheese and soup mix over the top of the potatoes. Cover; cook on high heat setting for 3 to 4 hours or until potatoes are tender.

3. Stir & Serve

Gently stir potatoes to integrate mixtures and serve.

Reheating

  • From the Refrigerator: Microwave on high for 3 minutes, then on high in 1-minute increments until hot. You can also reheat from the refrigerator in a foil-covered baking dish for 20 minutes in a 350°F oven.
  • From the Freezer: In a microwave-safe bowl, microwave frozen leftovers on high for 3 to 5 minutes and then in 1-minute increments until hot. You can also reheat from the freezer in a foil-covered baking dish for 30 to 45 minutes in a 350°F oven until bubbly on top and reaches an internal temperature of 165°F.

Ingredients

  • 6 medium potatoes, peeled and cut into 1/4-inch-thick slices (about 6 cups)
  • 1 medium onion, coarsely chopped (1 cup)
  • 1 1/2 cups cubed cooked ham
  • 1 can (10 3/4 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese (6 oz)
  • 1/4 teaspoon pepper
