Maple Balsamic Brussels Sprouts and Wild Rice Salads

Enjoy this delicious salad made with frozen Brussels sprouts and wild rice, with bacon and a touch of maple in the dressing.

Ingredients

teaspoons real maple syrup or maple-flavored syrup

tablespoon balsamic vinegar
1/4
teaspoon salt

teaspoon pepper

box (10 oz) baby Brussels sprouts & butter sauce

cups cold cooked wild rice

cup thin bite-size strips yellow bell pepper

tablespoons chopped red onion

tablespoons real bacon bits

large leaves Bibb lettuce, rinsed, patted dry with paper towels

Steps

  • 1 In medium bowl, mix syrup, vinegar, salt and pepper.
  • 2 Cook Brussels sprouts as directed on box. Cool 5 minutes. Add to syrup mixture in bowl; stir gently to coat. Stir in remaining ingredients except salad greens; mix well.
  • 3 Cover and refrigerate about 1 hour or until cold. To serve, place one lettuce leaf on each of 4 individual plates; top each with salad mixture.

Expert Tips

If you can't find wild rice, try a wild rice blend or brown rice instead.

If you don't have time to cook wild rice, try one of the precooked wild rice products instead. Check your supermarket in the grains aisle for a precooked pouch of ready-to-serve wild rice, or the freezer section for frozen cooked wild rice.
