A traditional hot beef sandwich starts with beef braised in beef stock, wine, Italian seasonings, onions, and garlic. This tender beef is then piled high on toasted rolls and served “sweet” or “hot,” depending on your taste. These options come in the form of sweet peppers or hot giardiniera. You can also ask for it “wet” or “dry.” A wet version is dunked in the au jus, which is the reduced liquid leftover from braising the beef. Then it’s wrapped up and left to sit for a minute to soak in the juices. The dry version skips the dunking step and is instead served with a side of the au jus for dipping.

For our variation on the classic sandwich, we took some liberties in order to make a beautiful crescent ring, but you still get all the delicious flavors of the beef, bread, giardiniera, and jus!

How to Make a Chicago Hot Beef Crescent Ring

While this Italian beef crescent ring looks super impressive, it’s very easy to make. Here, we’ll walk you through the process with all our tips and tricks, but you can find the complete recipe below.

Mix Filling Ingredients

While your oven heats up, mix your ingredients: Stir together shredded beef, half of the cheese, and the giardiniera. You can use mild or spicy giardiniera, depending on your family’s preferences. Pickled or oil-packed versions are both fine, but either way, be sure to thoroughly drain them before adding to the mixture. Some giardiniera comes chopped, but if yours has large pieces, be sure to cut in smaller pieces so it blends easily into the filling.

Make the Ring

Here’s the fun part! Arrange the 16 crescent triangles in a sun-shaped ring on your cookie sheet, forming a 5-inch circle in the center. Take your time evenly spacing the triangles, as a little extra effort at this point really pays off in the end.

Top with Filling

Carefully spoon the filling in a circle in the center of the ring. Keep it tidy and try to pile the filling high in the center all the way around so your finished crescent ring looks full and bakes up beautifully.

Enclose the Filling

Fold the tips over the filling and tuck them underneath on the inside of crescent ring. You shouldn’t have to stretch the crescent dough at all to complete this step. Some of the filling will show through, but if any pieces of the filling fall out, gently place it back inside before baking.

Bake and Add Cheese

Now we bake! After a few minutes of baking, top with the rest of the cheese. Waiting to add the cheese toward the end of baking prevents it from getting too brown and drying out.

    Heat oven to 375°F. Line large cookie sheet with cooking parchment paper. In medium bowl, mix beef, 1 cup of the cheese, and the giardiniera.

    Unroll both cans of dough; separate into 16 triangles. On cookie sheet, arrange triangles in ring so short sides of triangles form 5-inch circle in center. Dough will overlap. Dough ring should look like the sun.

    Bring each dough triangle up over filling, tucking dough under bottom layer of dough to secure it. Repeat around ring until entire filling is enclosed (some filling might show a little).
