Fire up the grill, and spend some time outdoors making these mouthwatering Grilled Meat Lover's Biscuit Cheeseburgers. Sizzling bacon, ground beef and sausage join forces to create fantastic flavors in an unbeatable handheld burger. And the best part of this recipe is that the grill does double duty—as the burgers cook on one side, your biscuits "bake" over indirect heat on the other!

Ingredients

Steps

  • 1
Spray 12-inch cast-iron or stainless steel skillet with cooking spray; place on grill. Heat gas grill to 400°F. Add bacon to skillet. Cook 12 to 18 minutes or until crispy, turning once. Transfer bacon to paper-towel lined plate to drain. Pour out bacon drippings, leaving 2 tablespoons of drippings in skillet.
  • 2
Meanwhile, separate dough into 8 biscuits; place biscuits in drippings in skillet. Turn off right side of grill; increase left side of grill to maintain 400°F. Place skillet with biscuits on right side of grill, keeping biscuits on indirect heat, 18 to 22 minutes, turning once, until both sides are golden brown.
  • 3
In large bowl, mix beef and sausage. Shape into 8 patties (about 5 oz each), and place on plate.
  • 4
Place patties on left side of grill side for direct heat cooking. Cook patties 4 to 6 minutes on each side or until they reach internal temperature of 165°F. Transfer to platter, and top each patty with slice of cheese. Cover to keep warm.
  • 5
Halve biscuits; spread bottom of each biscuit with 1 1/2 teaspoons barbecue sauce, top with 1 patty, one-fourth of an avocado, about 3 pieces bacon and 1/4 cup mixed greens. Top with biscuit tops.

Tips from the Pillsbury Kitchens

  • tip 1
For best results, only open the grill when absolutely necessary. Indirect heat grilling essentially turns your grill into an oven. Heat one side of the grill, and place food on the opposite side. This recipe cleverly uses both direct and indirect heat grilling at the same time. The patties cook over direct heat, while the biscuits cook indirectly. Since indirect heat grilling is closer to baking than traditional grilling, avoid opening your grill too often during cooking, as this will let heat escape.
  • tip 2
When shaping patties, make them slightly larger than the size of the bun or, in this case, the size of the biscuit. They will shrink a bit during cooking, so this ensures they’re exactly the right size. Also, making an indentation in the center of each patty is a good way to maintain the shape of the patties during cooking. Without making an indentation, the cooked patties will be thicker in the center and tapered around the edges.
  • tip 3
Carolina-style gold barbecue sauce is a South Carolina-style yellow barbecue sauce consisting of yellow mustard, vinegar, sugar and spices. If you have trouble finding it in your local stores, feel free to use your favorite barbecue sauce instead.
