Ingredients

  • 8 biscuits from 1 bag (41.6 oz) frozen Pillsbury™ Grands!™ Cornbread Biscuits (20 Count)
  • 1 lb ground beef (at least 80% lean)
  • 1/2 cup chopped onion
  • 1 can (15 oz) kidney beans, drained, rinsed
  • 1 can (15 oz) crushed tomatoes, undrained
  • 1/4 cup water
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese (4 oz)

    Heat oven to 375°F. Place biscuits on large plate or cookie sheet. Cover with plastic wrap, and let stand at room temperature 20 minutes.

    Meanwhile, spray 12-inch ovenproof skillet with cooking spray. In skillet, cook beef and onion over medium-high heat 6 to 8 minutes, stirring occasionally, until beef is brown; drain. Add beans, tomatoes, water, chili powder, cumin and salt; reduce heat to medium. Cook 3 to 4 minutes, stirring occasionally, until bubbling and heated through. Remove from heat.

    Top beef mixture with cheese.

    Arrange biscuits on top of cheese in pan. Bake 24 to 28 minutes or until biscuits are baked through and deep golden brown. Let stand 5 minutes before serving.

    If desired, substitute pinto beans or black beans for the kidney beans.

    To help the biscuits bake faster, let them partially thaw before placing on top of the chili. For food safety, make sure not to leave your biscuits out for too long—20 to 25 minutes is just the right amount of thawing time.
