Family-favorite ice cream toppings combine with Pillsbury™ Ready to Bake!™ Chocolate Chip Cookie Dough for a sweet treat made in the air fryer. These cookies are great on their own or as a showstopping addition to a dessert platter.

Ingredients

  • 12 large marshmallows
  • 1 1/4 cups candy-coated milk-chocolate almond candies (about 72 candies from 9.3-oz bag)
  • 1 package (16 oz) refrigerated Pillsbury™ Ready to Bake!™ Chocolate Chip Cookie Dough (24 Count)
  • 1/2 cup semisweet chocolate chips
  • 1 tablespoon shortening
  • 1/8 teaspoon almond extract

Steps

    Line inside of air fryer basket as follows: Turn basket of 5.8- or 6-quart air fryer over to shape piece of foil around basket bottom, then remove. Fold edges of foil to make the shape of the basket. Place inside bottom of air fryer basket, shiny side up; flatten evenly.

    Spray blades of kitchen scissors with cooking spray. Cut marshmallows in half; press one chocolate almond candy into each cut side. Place cut side up on plate. Repeat with remaining marshmallow halves and chocolate almond candies. Set aside.

    Place remaining chocolate almond candies in resealable food-storage plastic bag; seal bag. Using rolling pin, coarsely crush candy into smaller pieces; pour into small bowl. Set aside.

    Press and roll each cookie dough round in candy pieces, and shape into balls. Place 6 cookie dough balls on foil in air fryer basket, spacing evenly apart. Discard any remaining candy pieces after rolling cookie dough rounds.

    Set air fryer to 320°F; cook 8 to 9 minutes or until golden brown and cookies are set.

    Remove basket from air fryer; press 1 marshmallow half with chocolate almond candy side up in center of each cookie. Let cookies stand in basket 5 minutes. Carefully remove cookies on foil from basket to cooling rack, using spatula to help lift foil out of basket if needed. Cool 15 minutes on foil before removing. Repeat lining inside of air fryer with foil. Repeat cooking and cooling of cookie dough balls 3 more times, reusing and wiping foil liners clean with paper towel after cooking, as needed.

    After all cookies are cooked, place cooling rack over cooking parchment paper or waxed paper. In small microwavable bowl, microwave chocolate chips and shortening uncovered on High 30 seconds; stir. Continue microwaving in 15-second intervals until melted and smooth. Stir in almond extract. Pour or spoon into resealable food-storage plastic bag; cut tiny hole in bottom corner of bag. Drizzle melted chocolate over cookies. Let stand about 2 hours or until chocolate is set.

    Air fryer temperature control settings vary according to brand and model. If your air fryer does not have the exact temperature setting called for in the recipe, consult your manual for suggested temperature settings. Our recipes do not call for preheating your air fryer. Just set the temperature, and start. Never preheat with the foil liner alone.

    Cookies need to cool on the foil in order to set up properly, so be sure to follow the cooling steps as outlined in the recipe. If you can’t wait, skip the 15-minute cooling time on the foil. Drizzle melted chocolate as soon as the last batch of cookies has finished cooking and cooling for 5 minutes.

    If you don’t have a 5.8-quart or larger air fryer, you can use a 3.7- to 4-quart air fryer, and cook the cookies in six batches. Follow the same instructions, but only cook 4 cookie dough balls at a time, and cook 1 to 2 minutes longer. Cooking these Air Fryer Rocky Road Cookies in batches gives them enough room to spread while cooking.
