End of the Rainbow Cookie Parfaits
Pillsbury’s food editor gives a peek into the making of the recipes for this month’s St. Pat’s Day Wow Guide.

Creating recipes is one of the most enjoyable parts of my job, especially when it involves developing recipes around holidays and special events. When I was given the task to develop a collection of mini pot pies and St. Pat’s Day-themed desserts for our first-ever Wow Guide, I jumped at the chance!

Mini Shepard’s Pot Pies

My main goal with recipe development is always to make sure the ideas I create are easy to replicate, fun and family-friendly. For the mini pot pies, I focused on familiar flavors, like mac and cheese and corned beef and Swiss, as the recipe base. Then, I experimented with different ways to make these flavors work in mini form, using muffin pans, custard cups and ramekins. One of my favorites is the Mini Shepherd’s Pot Pies. It’s amazing how cute things are when they are in mini format, isn’t it?

End-of-the-Rainbow Cookie Parfaits

For the desserts, I wanted to come up with recipes that were colorful and fun and made creative use of Pillsbury products. Pillsbury refrigerated sugar cookie dough is one of my favorite products to work with because it’s so versatile. I used it as the base for Mini Whoopie Pies and End-of-the-Rainbow Cookie Parfaits. The secret to making the dough more cake-like – needed for whoopie pies and parfaits – is to add a couple eggs.
