Growing up, my dad would make Hamburger Helper for dinner whenever my mom was out of town. My sister and I loved it so much, we’d request it even when my mom was home. Now I reach for a box at the end of a busy day when I need a no-brainer meal.

This recipe starts with Hamburger Helper four cheese lasagna. Add a few fresh ingredients and you’ve got a quick, kid-approved weeknight dinner.

Here's how I make it my own:

  • Skip the food processor. I stirred in a cup of canned pumpkin in place of the pureed carrots for a quick nutrient boost. It adds a rich flavor and thick, creamy texture that is so satisfying!
  • Pile on the veggies! I sprinkled in some frozen peas for a pop of green, but feel free to add your favorite vegetable. It’s not hard to get your greens when they’re covered in a cheesy sauce!
  • Serve with freshly baked bread. You’ll feel like you’re eating at the corner bistro instead of your own house when you serve with these Italian Garlic Knots.
