Once you have all of the ingredients handy, heat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
With a shape knife, cut each biscuit in half, forming two rounds. Then, with your fingers or a rolling pin, flatten out the biscuit discs. Place 1/8 of the vegetable medley and a few pieces of grilled chicken on of the discs and cover with the second biscuit disc.
Seal the edges of the hand pie with a fork, and repeat the process with the remaining biscuits. Bake all eight hand pies in the preheated oven for about 20 minutes or until puffed and lightly brown. Remove from the oven and serve warm.
