Spinach and Pear Salad

Ingredients
- 4 firm ripe pears
- 1/3 cup fresh lime juice
- 1 teaspoon grated lime peel
- 1/3 cup honey
- 3 tablespoons olive or vegetable oil
- 1/8 teaspoon pepper
- 4 cups torn fresh spinach
- 3/4 cup torn radicchio
- 1/2 cup coarsely chopped walnuts
- 4 oz. (1 cup) crumbled feta cheese
Instructions

Step1Core each pear and cut lengthwise into 8 wedges. Toss with 1 tablespoon of the lime juice to prevent browning.

Step2In small jar with tight-fitting lid, combine remaining lime juice, lime peel, honey, oil and pepper; shake well.

Step3Arrange spinach and radicchio on individual salad plates. Fan 4 pear wedges on each plate. Sprinkle with walnuts and cheese. Spoon dressing over salads.
