How to Make Peppermint Patty Cookie Sandwiches

Review these simple steps first, then find the full ingredient list and detailed instructions below.

1. Bake the Cookies

Cut the 12 cookie dough rounds in half to make 24. For neater cookies, roll each dough half between your palms to reshape before placing on the cookie sheets.

2. Fill and Sandwich Cookies

Match cookies by size before sandwiching, as shapes can vary slightly. Spread frosting generously on one cookie and press the other on top, ensuring the frosting reaches the edges.

3. Decorate

Pour candy sprinkles into a shallow bowl, and gently roll the cookie edges in the sprinkles while the frosting is still soft, so they stick well.

How to Store Peppermint Patty Cookie Sandwiches

Here are our favorite ways to store your Peppermint Patty cookie sandwiches to keep them fresh and delicious.

Room Temperature

Store cookie sandwiches in a single layer in covered container for up to 3 days.

Refrigerator

Store cookie sandwiches in a covered container for up to 1 week. If stacking cookies, make sure the cookies are completely set, then place waxed or parchment paper between layers.

Freezer

Store as directed above, using a covered, freezer-safe container for up to 2 months.

Thawing

Remove frozen cookie sandwiches from container, and place in a single layer on a plate or tray. Let stand uncovered for about 15 minutes or until thawed.

Peppermint Patty Cookie Sandwiches Variations

Try these simple twists to make these Peppermint Patty cookie sandwiches your own.

Add a Festive Top: Sprinkle decorating sugar on the tops of half the cookie dough rounds before baking for a sparkly, colorful finish.

Swap the Cookie Dough: Try a different variety of Pillsbury™ Cookie Dough, like classic sugar cookie, chocolate chip, or double chocolate. Look for the 'Makes 12 Big Cookies' label on the package—this is the size you’ll need for this recipe.

Change the Filling: Use your favorite frosting flavor, or try a homemade chocolate ganache, buttercream, or jam.

Decorate for the Holidays: Swap in holiday-themed sprinkles or colorful decorating sugars to match any celebration or occasion.
