With this quick and easy bake, you'll have time to make your 'cue and eat it too!

Ingredients

1
lb ground pork
1
package (1 oz) Old El Paso™ taco seasoning mix
2
cans (15 oz each) Progresso™ black beans, drained, rinsed
1
can (14.5 oz) Muir Glen™ organic diced tomatoes
1
cup barbecue sauce
1
cup shredded sharp Cheddar cheese (4 oz)

Steps

  • 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • 2 In 12-inch nonstick skillet, cook pork with salt to taste over medium-high heat, stirring frequently, until no longer pink. Drain; wipe out pan, and return pork to pan.
  • 3 Add remaining ingredients except cheese; stir to combine. Spread in baking dish. Cover baking dish with foil.
  • 4 Bake 30 to 35 minutes or until instant-read thermometer inserted in center of casserole reads 165°F. Top with cheese, and recover with foil. Let rest at room temperature about 5 minutes or until cheese melts. If desired, serve over mashed potatoes with favorite barbecue additions: slaw, sliced green onions or buns.

Expert Tips

For a pretty and fresh-tasting alternative, swap out 4 oz crumbled feta for the Cheddar.

Add a pop of color and a little heat at the same time by sprinkling the finished bake with a couple tablespoons diced jalapeños.
