This make-ahead breakfast treat can be prepped the night before to bake up fresh the next morning. Just wait until your kitchen is filled with the smell of cinnamon rolls baking in the oven and those sleepy heads come rolling in! It’s also a cheery way to surprise a neighbor or nearby family member. Just drop off the warm dish and watch ‘em smile!

What is Cinnamon Roll Breakfast Casserole?

Cinnamon rolls are baked in the same dish that’s used to make the casserole (we don’t like doing a lot of dishes either!). The baked rolls are cut into pieces and spread in the bottom of the dish and dolloped with a filling of cream cheese, sugar, and milk. A cinnamon-egg mixture gets poured over all. Our cinnamon roll breakfast casserole is then refrigerated overnight, so all that cinnamony goodness gets soaked into the rolls. In the morning, all you have to do is bake the rolls and drizzle them with the icing that comes with the rolls. It’s decadent!

How Can I Serve this Breakfast Casserole?

We love scrambled eggs with cheese and some fresh fruit such as cut-up oranges or berries making friends with the cinnamon roll breakfast bake! If you like, serve it buffet style, letting everyone help themselves as they wake up.

Ingredients

Cinnamon Roll Mixture

Egg Mixture

  • 2 1/4 cups half-and-half
  • 6 eggs
  • 1/2 cup sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla

    Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Arrange rolls from both cans of dough as evenly as possible in baking dish. Bake 13 to 17 minutes or until golden brown. Cool in pan 10 minutes on cooling rack. Remove rolls from pan to cooling rack to cool completely. Place icing in refrigerator.

    Cut each roll into 9 pieces, cutting lengthwise into 3 pieces then cutting each piece into thirds. Place about half of pieces to evenly cover bottom of baking dish.

    In small bowl, combine cream cheese, 2 tablespoons sugar and milk. Spoon dollops of cream cheese mixture over roll pieces in baking dish. Layer with remaining roll pieces.

    In medium bowl, beat egg mixture with whisk until well blended; pour evenly over top of cinnamon roll mixture. With back of spoon, gently press roll pieces into egg mixture. Cover with foil; refrigerate overnight.

    Heat oven to 350°F. Uncover; bake 35 to 45 minutes or until browned and set in center. Spoon icing over warm casserole; spread as desired. Serve warm.

What does “until set” mean?

We like to include a visual doneness cue with each of our recipes if there is one. That way, you can bake to the minimum time and check for the visual doneness before you decide it needs more time. It’s nearly impossible to overbake anything if you cook/bake this way, rather than running the risk of having dishes turn out dry or too brown. For this recipe, the visual doneness cue is “until set in the center”. Jiggle the edge of the dish (using a hot pad, of course), and see if there is any liquid in the center that is still fluid looking. If not, it’s set, and you can take it out of the oven! If it’s not set, keep it in the oven for another minute or two until it is set.
