This Cheesy Sausage Breakfast Bubble-Up Bake takes all the things people love about a classic big breakfast—eggs, sausage, peppers, cheese, and Pillsbury™Grands!™ Flaky Layers Original Biscuits—and bakes them into one warm, savory, crowd-pleasing dish. It’s called a “bubble-up bake” because the biscuits rise as they bake, creating a soft, fluffy base that holds the cheesy egg mixture and turns into a golden crust around the edges. Every bite is comforting, flavorful, and perfect for serving a hungry morning crew. This easy recipe is great for holiday breakfasts, weekend brunch spreads, or busy mornings when you want something hearty and homemade with minimal prep. It’s colorful, satisfying, and built to bring people back for seconds.

Recipe Ingredients

All you need is 7 simple ingredients to make this brunch-worthy breakfast egg bake. Here’s what you’ll need.

Pillsbury™ Grands!™ Flaky Layers Original Biscuits: Pressed into the pan, they bake into a tender, golden crust that “bubbles up” through the filling.

Eggs: Heads up, this recipe takes almost a full carton of eggs! If you’d like to use some egg whites instead, you can replace 6 of the eggs with 12 egg whites (2 large egg whites = 1 large egg). We wouldn’t recommend using all egg whites for this recipe, though, because the texture and flavor won’t turn out as well.

Pork Sausage: This adds tons of rich, savory flavor to the whole dish. For a milder take, substitute 1 pound ground turkey or pork seasoned with 1/2 teaspoon of salt.

Other Ingredients You’ll Need: Onion brings a light sweetness, while green and red bell peppers add color and freshness to balance the richness. Shredded cheese melts into the eggs for gooey, cheesy pockets in every bite. We loved cheddar for this recipe, but you can use any shredded cheese you have on hand.

Refrigerator Storage

Store extra Cheesy Sausage Breakfast Bubble-Up Bake in an airtight container in the fridge for up to 3 days.

Freezer Storage

We wouldn’t recommend freezing this breakfast bake, because the biscuits may turn out soggy and dense when thawed.
