Easy Quiche
A good quiche can become a staple meal for breakfast, lunch, or dinner. This Easy Quiche recipe comes together quickly for a simple meal that the whole family can enjoy. You can adjust the ingredients slightly to your taste, but as it’s written, this is a classic, comforting breakfast dish that stands the test of time.
Recipe Ingredients
This is an overview of everything you need to make our Easy Quiche. See the full list below when you’re ready to begin!
Pillsbury™ Pie Crusts: These are easy to work with and keep you from the hassle of making pie crust from scratch.
Eggs: Eggs make up the base of a quiche’s filling! It’s important to use large-sized eggs to fill the crust, but you can use any type of large eggs you prefer.
Half-and-Half or Milk: Adding liquid to your egg mixture helps create a nice, custardy texture for the center of your quiche and results in a creamy filling.
Other Ingredients: Bacon and onion add extra flavor to the egg mixture and give the quiche its overall taste. Parmesan and Swiss or cheddar cheese add creaminess, flavor, and bulk up your dish. Salt and pepper heighten the flavors of the dish; use them to your taste.
Cookware You’ll Need
We kept this quiche recipe easy, so you’ll just need a few basic things you probably already have on hand.
Skillet: Use a large skillet to fry crisp bacon pieces.
Pie Plate: We’ve tested making pies in every type of material, and a heat-resistant glass pie plate will help your crust brown the best and have the flakiest texture. Another option is a ceramic pie plate, because it acts similarly to glass.
Mixing Bowl and Whisk: A medium mixing bowl and a whisk are all you’ll need to mix together the custard base for this quiche.
Other Equipment: Cutting board and knife for slicing bacon.
How to Make Easy Quiche
This simple recipe comes together quickly for any meal!
1. Cook the Bacon
Cook the bacon in a skillet over medium heat for 6 to 7 minutes or until crisp; drain on paper towels.
2. Prepare the Crust
Place the room temperature pie crust in a glass or ceramic pie plate, allowing any extra crust to hang over the edge. Press it firmly against the side and bottom. Tuck excess crust under toward pie plate edge, pressing to create a thick rim. Layer bacon, cheeses, and onion in the crust.
3. Make the Egg Mixture
In a medium bowl, use a wire whisk to beat the half-and-half in with the eggs after seasoning them. This is the most efficient way to blend the two together, creating a custard mixture that melds well with the other ingredients. Pour over the top of bacon, cheese, and onions in the crust.
4. Bake and Serve
Bake for 40 to 50 minutes at 350°F or until a knife inserted in the center comes out clean. Let stand for 10 minutes, cut into wedges, and serve.
Possible Variations
We’re big fans of this easy quiche recipe as is, but there are plenty of ways to customize it.
Swap Out the Meat: Try using 3/4 cup of chopped ham or sausage crumbles instead of bacon.
Fresh Toppings: Try a sprinkle of freshly chopped green onion for a sharp bite, or top your quiche with fresh tomatoes and basil. The flavor opportunities are endless!

How to Store (and Reheat) Easy Quiche
If you have leftover quiche, make sure to store and reheat it properly so you can safely enjoy your creation for a few days!
Refrigerator Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days. Be sure to store leftovers within 2 hours of finishing preparation.
Freezer Storage
Wrap individual slices in plastic wrap, then place in a resealable freezer plastic bag in the freezer for up to 3 months.
Reheating
- From the Fridge: To reheat a large portion of the quiche, place it on a baking sheet, cover with foil, and heat in the oven at 350°F for 15 to 20 minutes. If you want a single slice, you can microwave on high for 1 minute and then in 30-second intervals until hot (165°F).
- From the Freezer: Unwrap the individual slices and reheat in a 400°F oven, checking every 5 minutes, until heated through (165°F).

Frequently Asked Questions
For a crispy bottom crust, make sure to use the right pan. In this case, use a glass pie plate. Also, make sure to mend any cracks in the pie dough before adding the filling, so none can leak underneath. To do that, wet your fingers with cold water, and press edges of any holes together.
It’s no problem to make a crustless quiche, which is also called an egg bake. You’ll get the rich, savory quiche flavors you love with a crustless twist that lets the egg filling take the spotlight. In our overnight egg bake, a little flour is added to the filling to make it a bit heartier in place of the crust.
Whipping up this tasty quiche for an upcoming event or holiday gathering? No problem. The night before, just make the filling, form the pie crust in the pie plate, and cover the pie crust with plastic wrap. Refrigerate the pie crust and the quiche filling separately overnight. In the morning, give the filling a stir, add it to the crust, and bake your homemade quiche as directed!
We do not recommend halving this recipe. The current recipe ingredients perfectly fill the crust and bake times are based on this amount of filling.
A ceramic pie plate will also work if you don’t have a glass pie plate. However, metal pans do not hold heat in the same way as ceramic and glass and may result in a soggy crust. We do not recommend using a metal pie pan for this recipe.
