Caesar Salad Cups

Ingredients

  • 12 slices good quality white bread
  • 3 tablespoons olive oil
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 bag (7.2 oz) Caesar salad kit
  • 1/4 cup pine nuts, toasted
  • 1/4 cup Parmesan cheese

    Heat oven to 350°F. Spray 12 regular-size muffin cups with cooking spray.

    Remove crusts from bread. Roll bread slightly with rolling pin. In small bowl, mix together olive oil, basil, garlic powder and salt. Brush onto bread. Gently press 1 slice bread into each muffin cup, oil side up. The edges should hang over.

    Bake about 10 minutes or until crisp and golden brown. Remove from pan. Cool completely.

    Make Caesar salad as directed on bag. Spoon into bread cups; sprinkle with pine nuts and Parmesan cheese. Serve immediately.
