No Fail Summer Salsa and chips
A few fresh tomatoes, corn and some simple spices are all you need for delicious dipping all summer long.

I’ve been making a quick summer corn and avocado salsa for years. When I saw these new Guacamole Tortilla Chips, I thought it was a great way to simplify my go-to recipe since the flavors of avocado, cilantro and peppers are already in the chip!

Here’s how simple my “recipe” is. First, gather your ingredients: 

  • 2-3 Fresh Tomatoes,  
  • 1 Green Onion, white and green parts 
  • Canned Corn 
  • Spices: I used salt, pepper and cumin. You could add chili powder and even cayenne if you like some heat. 
  • Lime juice 

Next, dice your tomatoes, removing the seeds so you don’t have a watery salsa. Then slice your green onion into similar-sized coins. 

Drain your corn and combine with your fresh ingredients. Then season to taste. I like the following amounts: ½ teaspoon salt, ¼ teaspoon pepper, ½ teaspoon cumin and juice from ½ a lime. Enjoy right away, or refrigerate for a few hours to let the flavors get to know one another a little better. 

This beauty of this no-fail recipe is that you really can make it your own. Add an avocado for a creamier dip. Up the spice level with some diced pepper. Whatever you do, just don’t forget the chips!
