I love my slow cooker, it’s saved me a lot of trouble many times—especially when the kids are busy with their after-school activities. I usually set the cooker to start just before I pick them up from school and after we return home from softball or soccer, dinner is ready. There’s just no way I could have a meal ready after getting home, we’d be eating at 7 p.m.!

Chicken is my favorite ingredient for the slow cooker. It’s always a great price and you can buy it in bulk packs because chances are if you’re cooking this way, then it’s for the whole family. By adding Progresso soup to the recipe, you can capture a lot flavor without very few ingredients. It’s an easy dinnertime win-win.

Creamy Potato Bacon Slow Cooker Chicken

Prepare all the ingredients; there’s only four!


Place 4 chicken breasts into the slow cooker and cover with the sliced onion.

Add the 2 cans Progresso Light creamy potato with bacon & cheese soup and ½ cup of chicken broth to the slow cooker and mix gently with a wooden spoon.

Bake on high setting for 3 1/2 hours or 6 hours on low. Once the chicken is cooked, add 1 cup of water mixed with 1 tablespoon of cornstarch and stir through the sauce. Let stand for 5 minutes. Then, serve over cooked rice.
