My husband and I are the perfect example of the phrase, “Opposites attract.” He likes to play sports; I can’t throw a ball to save my life. I love to bake from scratch; he loves to bake frozen pizza. I hate scary movies; he can’t get enough of them. Still, there is something we both enjoy: saving time when it comes to making delicious meals in the kitchen. And these 2-minute microwave enchiladas are our go-to dish when we want to spend more time together and less time at the stove. 

Here’s how to make enchiladas for two in less than 10 minutes flat:

First, gather your ingredients. What I love most about this recipe is how you can tailor it to your own flavor preferences. You can stay simple with beans and cheese, or add in meat, jalapenos, salsa, eggs–whatever you like!
Next, fill the tortillas with your ingredients. Be careful not to overfill them or you’ll have trouble rolling them up. A little bit goes a long way.

Roll up your tortillas into enchiladas and place them in a shallow bowl or on a plate (microwave safe, of course). Top with enchilada sauce and more cheese.

Zap each plate in the microwave for 2 minutes or until the cheese inside each enchilada is melted.

Cover the warm enchiladas with your favorite toppings. (I love sour cream and chopped onions.) Dig in! Opposites or not, this is one recipe we can all agree is fantastic!
