lb baby potatoes, halved

lb green beans, trimmed

red onion, sliced

tablespoons olive oil
Salt and black pepper, to taste

lb sweet or hot Italian sausage links

    Heat oven to 400°F.

    In rimmed sheet pan, arrange 1 lb baby potatoes, halved, 1 lb green beans, trimmed, and 1 red onion, sliced. Drizzle with 2 tablespoons olive oil. Season with salt and pepper; toss to coat. Top with 1 lb sweet or hot Italian sausage links.

    Bake about 40 minutes or until sausages are cooked through.

  • Brussels sprouts or broccoli would also work well in this recipe instead of the green beans.
