Ingredients

  • 2 tablespoons olive or vegetable oil
  • 1 large onion, chopped
  • 2 stalks celery, sliced
  • 2 garlic cloves, minced
  • 3 cups coarsely chopped cabbage
  • 2 medium carrots, sliced
  • 5 1/4 cups Progresso™ beef flavored broth (from two 32-oz. cartons)
  • 2 cups water
  • 1 1/2 teaspoons dried Italian seasoning
  • 1/4 teaspoon pepper
  • 2 cups frozen cut green beans
  • 2 small zucchini, sliced
  • 2 (15.5-oz.) cans red beans, drained, rinsed
  • 3 oz. (1 cup) uncooked rotini (spiral pasta)

Instructions

  • Step

    Heat oil in Dutch oven over medium-high heat until hot. Add onion, celery and garlic; cook and stir 2 to 3 minutes or until onion is tender. Add cabbage, carrots, broth, water, Italian seasoning and pepper; mix well. Bring to a boil. Reduce heat; cover and simmer 15 minutes, stirring occasionally.

    Return to a boil. Add all remaining ingredients; mix well. Simmer, uncovered, for 10 to 15 minutes or until vegetables and rotini are tender, stirring occasionally. If desired, season to taste with salt and pepper.
