Grilled Jerk Fish

Ingredients

Jerk Seasoning

  • 1/2 teaspoon instant minced onion
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sugar
  • 1/8 teaspoon salt
  • 1/4 teaspoon allspice
  • 1/4 teaspoon freeze-dried chopped chives
  • 1/4 teaspoon ground thyme
  • 1/8 teaspoon pepper
  • 1/8 teaspoon ground red pepper (cayenne)
  • Dash cinnamon
  • Dash nutmeg

Fish

  • 1 tablespoon oil
  • 6 (4-oz.) halibut, grouper, swordfish or tilapia steaks (3/4 inch thick)
  • Fresh chives or thyme, if desired

    GRILL DIRECTIONS: Heat grill. In small bowl, combine all jerk seasoning ingredients. Add oil; stir to combine. Spread mixture on both sides of halibut steaks.

    When ready to grill, oil grill rack. Place fish on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium-high coals. Cook 8 to 13 minutes or until fish flakes easily with fork, turning once. Garnish with fresh chives.
