Enjoy these coconut cookies glazed with lime and sugar – perfect for Christmas dessert made using Pillsbury® refrigerated sugar cookies.

Ingredients

roll (16.5 oz) Pillsbury™ refrigerated sugar cookies
1/4
cup all-purpose flour
1
tablespoon grated lime peel
1 1/4
cups powdered sugar
2
tablespoons fresh lime juice
1
cup sweetened flaked coconut

Steps

  • 1 Heat oven to 350°F. In medium bowl, break up cookie dough. Knead in flour and lime peel until well blended.
  • 2 Shape dough into 1-inch balls. On ungreased cookie sheets, place balls 2 inches apart.
  • 3 Bake 12 to 14 minutes or until set and edges are lightly browned. Cool 2 minutes; remove from cookie sheets to cooling rack. Cool completely.
  • 4 In small bowl, mix powdered sugar and lime juice. Spread glaze over each cookie; immediately sprinkle with coconut, shaking off excess. Let stand until set.
