Ingredients

  • 1 (15-oz.) can cannellini beans, drained, rinsed
  • 1 tablespoon lemon juice
  • 1 egg
  • 1/3 cup Progresso™ Italian Style Bread Crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1/2 Italian plum tomato, chopped
  • 2 tablespoons finely chopped celery
  • 2 tablespoons finely chopped green bell pepper
  • 2 tablespoons finely chopped onion
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon hot pepper sauce
  • 2 tablespoons tartar sauce

Steps

    Mash beans in medium bowl. Add lemon juice and egg; blend well. Add all remaining ingredients except tartar sauce; mix well. Shape into three 4-inch patties.

    Spray 12-inch nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Using pancake turner, transfer patties to skillet; cook 6 to 8 minutes or until thoroughly heated and lightly browned, turning once. To serve, top each with about 2 teaspoons tartar sauce.

  • tip 1
    To make Italian Bean patties, add 2 tablespoons of pesto to the bean mixture; cook as directed. Omit the tartar sauce. Instead, serve the patties with thick pieces of garlic toast and heated spaghetti sauce.

    Serve grape tomatoes and wedges of cantaloupe sprinkled with chopped fresh mint with these bean patties.
