With a little planniing ahead you can have cooked rice in the refrigerator ready to go. When you are cooking rice, add an extra cup of uncooked rice to the pot so you have 2 cups of leftover rice. Or, stop at an Asian restaurant and buy 2 cups of cooked rice.
