Garlic, ginger and soy lend some bite to broccoli and peppers. Cook the broccoli just until it is crisp-tender and serve the dish right away for the brightest color.

Ingredients

  • 1 tablespoon oil
  • 3 cups bite-sized fresh broccoli florets
  • 1/2 teaspoon minced gingerroot
  • 1 garlic clove, minced
  • 2 tablespoons water
  • 1 small red bell pepper, cut into 1/4-inch strips
  • 1 small yellow bell pepper, cut into 1/4-inch strips
  • 1 tablespoon reduced-sodium soy sauce

Steps

    Heat oil in large skillet or wok over medium-high heat until hot. Add broccoli, gingerroot and garlic; cook and stir 1 minute.

    Add water; cover and cook 2 minutes. Add bell peppers; cook and stir 1 minute. Stir in soy sauce.
