Bring some big-league flavor to your next tailgating party with this recipe finalist from the 53rd Pillsbury Bake-Off® Contest. Golden, fluffy Pillsbury™ Grands!™ Flaky Layers Original Biscuits are stuffed with juicy Italian beef, cream cheese, and a tangy kick of giardiniera (a traditional Italian relish made  of pickled vegetables). It’s a flavor combo that scores with any crowd!

“I've lived in Chicago my whole life, and my love for bold, hearty flavors runs deep,” explains recipe creator Amy B. from Illinois. “I wanted to create a bite-sized recipe that brings people together, whether you're cheering from the tailgate or the living room. This is my tribute to the flavors and energy that make every hometown crowd proud.”

These tasty, beefy biscuit bites are quick to prep, easy to bake, and absolutely irresistible dipped in warm au jus. Whether it’s tailgate time, halftime, or overtime, these bites will keep you in the snacking zone!

Recipe Ingredients

You don’t need a long roster to pull off this recipe—just a few MVP ingredients.

Pillsbury™ Grands!™ Flaky Layers Biscuits: No need for mixing or kneading! Each biscuit creates an easy wrap to go around all the fillings and bakes up into the perfect handheld bite.

Italian-Style Roast Beef with Jus: This convenient pre-cooked meat brings rich, savory flavor to every bite, and the jus is great served on the side for dipping. Look for it in the meat department of your favorite grocery store.

Giardiniera: This pickled veggie relish mixture packs in the crunch, tang, and light spiciness that make these bites stand out in the crowd. We prefer hot giardiniera, as it adds tons of flavor, but if your family doesn’t like spice, you can use the mild variety instead.

Other Ingredients You’ll Need: Cream cheese spread adds rich creaminess to the filling and helps balance the spice from the giardiniera. A beaten egg brushed over the tops of the bites gives each biscuit a glossy, golden finish. Optional sesame seeds sprinkled on top add a nice crunch and a bakery-style look.

How to Make Blitz It Beef Bites

Here’s a quick look at how to make this beefy, cheesy football appetizer. Keep reading for the full recipe directions!

1. Prep and Fill the Biscuits

Flatten each biscuit into a 4-inch round and top with a spoonful each of roast beef, cream cheese, and giardiniera. We found that finely shredding the beef makes it easier to fit into the bite. Also, be sure to drain the giardiniera well before adding; if there’s too much liquid, the dough will be harder to pinch together and seal properly.

2. Seal Them Up

Fold and pinch the dough around the filling to form a neat ball, making sure it’s sealed tightly to prevent the dough from opening up during baking. You want to make sure there are almost no visible seams!

3. Bake and Enjoy

Place seam-side down on a parchment-lined baking sheet so the filling stays put and the bites don’t stick. Brush the tops with egg, sprinkle with sesame seeds, and bake in a 375°F oven for about 15 minutes until puffed up, flaky, golden brown, and hot.

How to Store (and Reheat) Blitz It Beef Bites

If you happen to have leftovers, they’re perfect for a next-day replay. Here’s what to do.

Refrigerator

Store these beef bites in an airtight container for up to 2 days.

Freezer

We wouldn’t recommend freezing the bites, because the biscuit dough will become dense and soggy when thawed.

Reheating

  • In the Microwave: Heat on high for 30 seconds, then in 15-second increments until heated through.
  • In the Oven: Heat in a 350°F oven, covered with foil to prevent overbrowning, for 12 to 15 minutes or until heated through.
