As the main meal-preparer in the house I find myself going to same dinner recipes again and again. I’m constantly trying to break myself out of the dinnertime rut of pizza, chicken nuggets, pasta, repeat. Lately, I’ve added this slow-cooker chicken into the mix. The great thing is it fits my simple and everyone-loves-it requirements. BUT, it’s so versatile I never get sick of making (and eating) it.

Here’s how I make it my own:

  • Serve it in an easy-to-fill, fun-to-eat Stand and Stuff tortilla shell – the nacho-blasted version is a favorite in my house.
  • Make hearty, dinner-worthy nachos by piling cantina-style tortilla chips, chicken and cheese on a sheet pan and broiling for a few minutes. 
  • Make a lighter-tasting chicken version of the always-delicious Taco Ring. Just start on step two!
