Ingredients

  • 3 cups cooked regular long-grain white rice (cooked as directed on package, omitting margarine and salt)
  • 1 large tomato, finely chopped
  • 1 small ripe papaya, peeled, seeded and coarsely chopped
  • 2 medium jalapeño chiles, seeded, chopped (2 tablespoons)
  • 1/2 cup loosely packed chopped fresh cilantro
  • 2 tablespoons finely chopped red onion
  • 1 1/2 teaspoons sugar
  • 1 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon coarse ground black pepper

Steps

    In large bowl, combine all ingredients; toss gently to combine.

    Serve immediately, or cover and refrigerate until serving time. Bring to room temperature before serving.
