Sun-dried tomatoes and bacon give lots of flavor to this ultra-easy pasta dish.

Ingredients

  • 1 box (1 lb) angel hair pasta
  • 1 jar (7 oz) sun-dried tomatoes in olive oil, drained and oil reserved
  • 1/2 cup grated Parmesan cheese
  • 8 slices bacon, crisply cooked and crumbled

Steps

    Cook and drain pasta as directed on package.
  • 2
    Toss pasta in oil from sun-dried tomatoes. Season pasta lightly with salt and pepper.

    Chop sun-dried tomatoes. Add to pasta.
  • 4
    Top pasta with Parmesan cheese; toss to coat evenly. Divide pasta among 6 bowls. Top with bacon.

    This pasta can be made with shrimp in place of the bacon, if desired. Just swap the bacon for 1 lb cooked shrimp.

    If a saucier pasta is desired, stir a little of the pasta cooking water into the pasta before serving.
