Fiber One™ 90 calorie lemon bar

1/2

cup reduced-fat whipped topping, thawed

3/4

teaspoon grated lemon peel

1/2

teaspoon fresh lemon juice

Cut lemon bar into 12 bite-size pieces. In small bowl, mix whipped topping, 1/2 teaspoon of the lemon peel and the lemon juice. In small serving glass, layer half of lemon bar pieces and half of whipped topping mixture. Repeat layers with remaining lemon bar pieces and whipped topping mixture. Garnish with remaining 1/4 teaspoon lemon peel. Serve immediately.

Expert Tips

Since you need grated lemon peel for the flavor and look of this recipe, fresh squeezed lemon juice is best to use, but you can always substitute bottled lemon juice.
For best results, use a microplane to grate the lemon peel.
