You can picture it—fluffy potato dumplings in a light creamy sauce, studded with smoky bacon and sweet pops of green peas. Add a shower of Parmesan cheese to finish, and your date will think you’re moonlighting as a chef! Added bonus? When you’re done serving your masterpiece, there’s only one pan to wash. It may feel fancy, but it’s easy enough to add to your weeknight dinner standbys.

Shelf-Stable Gnocchi: This product is available at most grocery stores in a 16- ounce package, just what you’ll need for this recipe. Look for it with the dry pastas.

Bacon: Bacon is the dominant flavor in Gnocchi with Bacon and Peas, so use the best quality bacon you can. We love the texture that thick-cut bacon lends.

Heavy Cream: The high fat content in heavy cream is what gives the sauce its luxurious finish. Don’t try to substitute!

Peas: The bright, sweet peas are a welcome contrast to the chewy bacon and savory gnocchi. Any frozen peas will do, but don’t use fresh.

Parmesan: Finely grated Parmesan cheese emulsifies with the cream and bacon fat to create the silky finished sauce. Buy pre-grated Parmesan or grate your own with a very fine grater.

1. Cook the Bacon

Cook the bacon just until it starts to render its fat. You’ll continue to cook it to crisp once you add the gnocchi.

2. Fry the Gnocchi

Fry the gnocchi in the bacon fat until they are cooked through and have become golden and crispy. The gnocchi are fragile, so don’t stir too often!

3. Make the Sauce

Remove the gnocchi and bacon from the pan, and bring the cream to a boil. Reduce the heat to very low and melt in the cheese. The low heat will keep the sauce velvety and smooth.

4. Finish

Heat the peas in the sauce; then, add the gnocchi and bacon back in and give a quick stir to coat them in the sauce. Shower with more Parmesan to serve.

Here’s how to store the gnocchi if you have any leftovers.

Refrigerator

Store the gnocchi in an airtight food storage container in the refrigerator for 3 to 4 days.

Reheating

To reheat, place gnocchi in a microwave-safe bowl, and cover loosely with a lid. Microwave on Medium-High (70% power) in 1 minute intervals, stirring after each interval, until hot.

Alternatively, add the gnocchi to a small saucepan and cover with a lid. Heat over low heat, stirring occasionally, until hot.

Ingredients

  • 4 slices bacon, diced into 1/2-inch pieces
  • 1 package (16 oz) shelf-stable gnocchi
  • 1 cup heavy cream
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/3 cup grated Parmesan cheese, plus extra for garnishing, if desired
  • 1 cup frozen sweet peas

Instructions

    Heat a large skillet over medium-low heat. Once hot, add diced bacon. Cook until fat begins to render, about 2 to 3 minutes.

    Add gnocchi to the pan, and stir to coat in bacon fat, scraping up any bacon bits that may be stuck to the bottom of the pan. Increase heat to medium, and fry the gnocchi for about 8 to 10 minutes, until golden and starting to crisp, stirring occasionally to allow even browning.

    Remove gnocchi and bacon from the pan and set aside.

    Into the same pan, add cream, pepper, and garlic powder. Cook over medium heat, stirring constantly until the cream comes to a simmer, about 1 minute.

    Adjust heat to low, and add the Parmesan to the cream mixture. Stir until the cheese has melted, about 30 seconds.

    Add the peas and stir until evenly distributed and heated through (165°F), about 3 to 5 minutes. Add the gnocchi and bacon mixture; toss together and serve with more Parmesan on top if desired.
