Ingredients
- 1/3 cup all-purpose flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1 egg
- 1 tablespoon water
- 2/3 cup cracker crumbs or unseasoned dry bread crumbs
- 1/4 cup oil or butter
- 1 pint (2 cups) fresh oysters, drained

Step1In shallow dish, combine flour, salt and pepper. In another shallow dish, combine egg and water; beat well. Place crumbs in medium bowl.

Step2Heat oil in medium skillet over medium-high heat until hot. Coat oysters with flour mixture; dip in egg mixture. Coat with crumbs. Add oysters to pan; cook 8 to 10 minutes or until golden brown, turning once. If desired, serve with lemon wedges or tartar sauce.
