Steps

Hide Images
  • 1
Heat oven to 400° F. Position rack in center of oven.
  • 2
In 10-inch ovenproof skillet, cook 6 slices chopped bacon over medium to medium-high heat about 5 minutes or until crispy. Use slotted spoon to transfer bacon to paper towel-lined plate. Drain all except about 2 tablespoons drippings from skillet.
  • 3
Add 1 1/2 lb diced unpeeled red potatoes to skillet; toss to coat with drippings. Sprinkle in 1 package (1 oz) ranch dressing and seasoning mix; toss again to evenly coat. Return bacon to skillet; toss.
  • 4
Bake 35 minutes, tossing every 10 minutes.

Expert Tips

  • Any ovenproof skillet will work, but I love to use my large seasoned cast-iron skillet.
  • Noticing that potatoes cool off quickly? Decrease oven temperature, and keep skillet warm in oven until just before serving.
