When it comes to cheese, the best cheese to put on top of your pizza is one that melts easily. This is why mozzarella is such a popular cheese on pizza. Many pizzas will use a mixture of mozzarella and provolone for more flavor. If you want to make a fancier, richer pizza, try using Gouda, goat cheese or Gruyère cheese.
