Ingredients

  • 4 oz. uncooked rigatoni (pasta tubes with ridges)
  • 2 hot Italian turkey sausage links, sliced
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1 cup low-fat chunky spaghetti sauce
  • 2 tablespoons grated Parmesan cheese, if desired

Steps

    Cook rigatoni to desired doneness as directed on package. Drain; cover to keep warm.

    Meanwhile, in medium nonstick skillet, cook sausage over medium heat for 10 minutes or until no longer pink. Drain.

    Add bell peppers; cook and stir 3 to 5 minutes or until bell peppers are tender.

    Stir in spaghetti sauce; cook 1 minute or until thoroughly heated. Serve sausage mixture over rigatoni. Sprinkle with cheese.

    Rigatoni is short, fat, tubular pasta. It’s easier to serve and eat than spaghetti. Turkey Italian sausage is available in hot and sweet varieties. Hot turkey sausage gets its spice from red pepper flakes. Sweet turkey sausage has a stronger fennel flavor.

    Freeze the sausage links for 20 to 30 minutes for easier slicing.
