Enjoy this classic Reuben sandwich filled with turkey and sauerkraut - perfect when you want dinner to be ready in 20 minutes.

Ingredients

  • 8 slices marble rye bread
  • 1/4 cup purchased Thousand Island salad dressing
  • 1/2 lb. thinly sliced deli smoked turkey breast
  • 1 (8-oz.) can sauerkraut, drained, rinsed
  • 2 (1 1/2-oz.) slices Swiss cheese, halved
  • 1/4 cup margarine or butter, softened

Steps

  • 1
    Spread one side of each bread slice with salad dressing. Layer 4 slices with turkey, sauerkraut and Swiss cheese. Top each with remaining bread slice, salad dressing side down. Spread outside of sandwiches with margarine.

    Heat medium skillet over medium heat until hot. Cook 2 sandwiches at a time for 4 minutes, turning after 2 minutes.

  • tip 1
    Rye or pumpernickel bread can be used in place of the marble rye bread. For each sandwich, use one flavor of bread or a slice of each flavor.
  • tip 2
    To reduce the fat in each sandwich by about 9 grams, use fat-free salad dressing and reduce-fat margarine in place of the regular products.
  • tip 3
    After rinsing the sauerkraut, snip the strands with a kitchen scissors to make them easier to eat.
