Ingredients

  • 2 lb beef stew meat
  • 1/4 teaspoon salt
  • 2 tablespoons canola oil
  • 2 cups finely chopped onions (2 large)
  • 4 cloves garlic, finely chopped
  • 1 jar (15 oz) mild curry sauce
  • 1 cup Progresso™ beef-flavored broth (from 32-oz carton)
  • 2 tablespoons fresh lime juice
  • 1/2 cup chopped fresh cilantro
  • Hot cooked rice, if desired

    Spray 5- to 6-quart slow cooker with cooking spray. In 12-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until browned. Place beef in slow cooker; sprinkle with salt. In skillet, heat oil over medium heat. Cook onions and garlic in oil 5 minutes, stirring occasionally, until tender. Spoon mixture over beef.

    In medium bowl, stir together curry sauce, broth and lime juice. Pour into slow cooker; stir to combine.

    Cover; cook on Low heat setting 8 hours. Serve stew over rice. Sprinkle with cilantro.
