Roasted Tomato-Goat Cheese Tarts

These simple tarts so look so sophisticated, yet are ridiculously easy to make and are mouth-wateringly delicious. If you like, sprinkle tarts with salt and pepper before baking.

Ingredients

  • 2 oz crumbled goat cheese (about 1/2 cup)
  • 1 tablespoon honey
  • 1 teaspoon dried thyme leaves
  • 1 tablespoon plus 2 teaspoons olive oil
  • 1 medium sweet onion, halved and sliced (about 2 1/2 cups)
  • 1 can refrigerated Pillsbury Original Crescent Dough Sheet
  • 2 plum (Roma) tomatoes, thinly sliced
  • 2 teaspoons olive oil

Steps

    Heat oven to 400°F. Lightly spray large cookie sheet with cooking spray. In small bowl, mix goat cheese, honey and 1/2 teaspoon of the thyme; set aside.

    In 10-inch skillet, heat 1 tablespoon olive oil over medium-high heat. Stir in onions to coat with oil. Cook uncovered 10 minutes, stirring every 2 to 3 minutes, or until golden brown.

    Unroll dough on work surface. Starting at center, gently pat into 14x8-inch rectangle. Using 2 1/2-inch round cookie cutter, cut into 15 rounds, rerolling if necessary. Place rounds 1/2 inch apart on cookie sheet.

    Gently spread about 1 teaspoon goat cheese mixture on each round. Top with onions and tomato slices. Drizzle with 2 teaspoons olive oil; sprinkle with remaining 1/2 teaspoon thyme.

    Bake 10 to 13 minutes or until crust is golden brown. Immediately remove from cookie sheet. Serve warm.

    Sweet onions are milder than regular yellow or white onions. Sweet varieties include Vidalia, Walla Walla and Maui onions.

    If the dough sticks to the cookie cutter, dip it into flour before cutting the rounds.
