Mini quiches with bacon and cheese are the perfect party appetizer. They also make for a fun twist on breakfast or even dinner. In a hurry? You can bake up a batch in under an hour, thanks to Pillsbury™ Mini Pie Crusts. These handheld delights are sure to be a hit no matter where or when you serve them.

Ingredients

  • 7 mini crusts from one box (14.1 oz) refrigerated Pillsbury™ Mini Pie Crusts (14 Count), softened as directed on box
  • 1/2 cup half-and-half or milk
  • 2 eggs, slightly beaten
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 slices bacon, crisply cooked, crumbled (1/3 cup)
  • 1/2 cup shredded Swiss or cheddar cheese (2 oz)

    Heat oven to 425°F (400°F for dark or nonstick muffin pan). Remove crust from one pouch; slowly and gently unroll on work surface. Separate into 7 crusts; discard scraps. Fit crusts into 7 ungreased regular-size muffin cups, pressing firmly against sides and bottoms.

    In medium bowl, mix half-and-half, eggs, salt and pepper; set aside. Divide bacon and cheese among crust-lined cups. Pour egg mixture evenly into each crust-lined cup.

    Bake 16 to 18 minutes or until edges are deep golden brown and filling is puffed and baked through. Cool in pan 10 minutes.

    Use offset spatula or spoon to gently remove quiches from cups. Serve warm or at room temperature.

(If baking in batches, refrigerate remaining cups until baking.) For a meat-free option, leave out the cooked bacon.
